So tonight I decided to make Magic Cookie Bars, just for the heck of it.
Not exactly diet food, but it’s a great dessert for an autumn evening like tonight. The best part is that it’s easy to make and hits the sweet tooth in just the right spot.
If you aren’t familiar with Magic Cookie Bars, the recipe calls for just a handful of ingredients – graham cracker crumbs, butter, sweetened evaporated milk, chocolate chips, sweetened coconut and butterscotch chips. If you don’t want to use butterscotch chips, this can always be replaced with chopped nuts or little marshmallows – you decide.
Here’s how you put it all together:
Preheat your oven to 350 degrees.
Take 1 1/2 cups of graham cracker crumbs, 1/2 cup of melted butter and mix well. Evenly put this mixture in a greased (buttered) 9X9 baking dish.
Pour the 14 ounce can of sweetened, evaporated milk evenly over the graham cracker crumbs.
Add a handful of chocolate chips on top.
Generously sprinkle shredded coconut on top of the chocolate chips.
Lastly add butterscotch chips (or nuts or marshmallows.)
Put it in the oven for 30 minutes.
When the timer goes off, pull it out, allow to cool and then cut into squares. Then enjoy! You can worry about the gym tomorrow 😉
